2 med. - lg. Fresh-From-The-Garden Tomatoes
5 Hard Boiled Eggs
¼ c. Mayonnaise
1 T. Onion, finely chopped
1 Tbsp. Pickle Relish, optional (either sweet or dill is fine)
1 tsp. Yellow Mustard
1 tsp. Salt
⅛ tsp. Pepper
Directions
First, hard boil the 5 eggs. My preferred method for doing this is to place the eggs in a pot of water. Heat the pot over medium - high heat. When the water begins to boil, turn off the stove and remove the pot from the heat. Let the eggs sit in the pot of water until it has reached room temperature.
When the eggs are cooled, remove the shells and dice them into a small mixing bowl.
Now, add all the other ingredients needed for the egg salad - mayonnaise, onion, relish, mustard, salt and pepper. Mix till thoroughly combined and set aside.
Next, slice the tomatoes. Try to make them evenly sliced about ½ inch thick. Arrange the tomatoes on a place or serving platter.
Now, spoon the prepared egg salad onto the tomatoes. When it has been evenly distributed on the tomato slices, spread it out on each tomato with e back of a spoon.
Garnish each egg salad tomato with a sprinkling of paprika or seasoned salt and a pinch of parsley.
