Scale

Ingredients

2 med. - lg. Fresh-From-The-Garden Tomatoes

5 Hard Boiled Eggs

1/4 c. Mayonnaise

1 T. Onion, finely chopped

1 Tbsp. Pickle Relish, optional (either sweet or dill is fine)

1 tsp. Yellow Mustard

1 tsp. Salt

1/8 tsp. Pepper

Instructions

  1. First, hard boil the 5 eggs. My preferred method for doing this is to place the eggs in a pot of water. Heat the pot over medium - high heat. When the water begins to boil, turn off the stove and remove the pot from the heat. Let the eggs sit in the pot of water until it has reached room temperature.
  2. When the eggs are cooled, remove the shells and dice them into a small mixing bowl. A kettle with 4 hard boiled eggs in water.
  3. Now, add all the other ingredients needed for the egg salad - mayonnaise, onion, relish, mustard, salt and pepper. Mix till thoroughly combined and set aside. All necessary ingredients added to a small mixing bowl.
  4. Next, slice the tomatoes. Try to make them evenly sliced about 1/2 inch thick.
  5. Arrange the tomatoes on a place or serving platter.  Sliced, garden fresh heirlooms on a plate.
  6. Now, spoon the prepared egg salad onto the tomatoes. When it has been evenly distributed on the tomato slices, spread it out on each tomato with e back of a spoon.  Tomatoes topped with egg salad on a plate.
  7. Garnish each egg salad tomato with a sprinkling of paprika or seasoned salt and a pinch of parsley.

Now that you've enjoyed your Egg Salad Tomatoes, you might be wondering how to store any leftovers properly. Follow these storage suggestions to keep your delicious dish fresh and safe to eat:

    • Refrigeration is Key: After preparing your Egg Salad Tomatoes, refrigeration is crucial. Place any leftover portions promptly in an airtight container. This helps maintain their freshness and prevents spoilage.

    • Label and Date: Consider labeling the container with the date to help you keep track of freshness. Egg salad typically remains safe to eat for about 3-4 days when properly refrigerated.

    • Avoid Freezing: It's best not to freeze your Egg Salad Tomatoes. The texture of the egg salad can change significantly after thawing, resulting in a less appealing dish.

    • Tomato Separation: If you've added egg salad to tomato slices and have leftovers, consider storing them separately. Keep the egg salad in one container and the tomato slices in another. This way, the tomatoes won't become soggy from the egg salad's moisture.

    • Quality Check: Before consuming leftovers, perform a visual and odor check. If the egg salad or tomatoes appear discolored or have an off-putting odor, it's best to discard them to avoid any foodborne illnesses.

By following these storage suggestions, you can extend the life of your Egg Salad Tomatoes and enjoy their delightful flavors even on the following day
