Of all the breakfast casseroles I have eaten in my lifetime, this is one of my favorites. This recipe comes from my mother's kitchen. When I was a child, we had relatives who would visit from out-of-state. When they would come to the area, we would have the privilege of hosting them for a few days. This was one of her go-to recipes to serve up for breakfast!
And it is easy so understand why. This blueberry cream cheese French toast casserole is so simple to create. It is made the day before you plan to eat it and it chills in the fridge overnight. Then, in the morning, it is placed in the oven to bake. Just like that, you have a no-fuss, warm breakfast that everyone is going to love and be wanting seconds!
I've made this on so many occasions, myself. It's perfect for hosting breakfast or brunch with family and friends. I've taken it to our church's Christmas brunch, to events such as mom's breakfast meet ups, and other, breakfast/brunch events. It is always a hit! This dish would be perfect for special occasions, such as Christmas morning brunch, as well.

Ingredients
6 c. Bread, cubed - I recommend using a good quality bread such as French, brioche, challah, or sourdough. But feel free to use whatever bread you have!
12 Eggs
2 ½ c. Milk
⅓ c. Maple Syrup (Brown sugar or honey is fine, too)
1 T. Vanilla
1 t. Cinnamon
1 Block Cream Cheese (8 oz.)
1 ½ c. Fresh Blueberries
Directions
Assembling the Blueberry Cream Cheese French Toast Casserole
To begin, cut or pull the bread apart into cubed pieces that are approximately ¾ inches in size. Spread these bread cubes evenly in a greased, 9 x13 inch pan.
Next, combine the eggs, milk, maple syrup, vanilla, and cinnamon in a blender. Blend these together for 15-30 seconds until the milk and eggs have mixed together well.
Pour the mixture evenly over the cubed bread in the pan.
Now, cut the cream cheese into small cubes, about ½ inch in diameter, and scatter them across the top of the dish.
Next, rinse the blueberries in cool water and spread them across the top of the bread cubes, as well.
Cover the baking dish with foil and place in the refrigerator overnight.
Baking the Blueberry Cream Cheese French Toast Casserole
In the morning, preheat the oven to 350 degrees.
Remove the French toast casserole from the refrigerator. Place the dish (covered with foil) into the preheated oven and bake for 1 hour. For the last 15 minutes of the bake time, remove the foil.
When the French toast casserole appear to be bake through, remove from the oven.
Serve warm with your favorite maple syrup! Enjoy!
