Fresh, warm French toast with delightful blueberries and cream cheese in every bite... that's drizzled with sweet maple syrup. This blueberry cream cheese French toast casserole is the perfect way to wake up your tastebuds in the morning!

Ingredients

6 c. Bread, cubed - I recommend using a good quality bread such as French, brioche, challah, or sourdough. But feel free to use whatever bread you have!

12 Eggs

2 1/2 c. Milk

1/3 c. Maple Syrup (Honey is fine, too)

1 T. Vanilla

1 t. Cinnamon

1 Block Cream Cheese (8 oz.)

1 1/2 c. Fresh Blueberries

Instructions

Assembling the Blueberry Cream Cheese French Toast Casserole

  1. To begin, cut or pull the bread apart into cubed pieces that are approximately 3/4 inches in size. Spread these bread cubes evenly in a greased, 9 x13 inch pan.  Cubed bread in a rectangle pan
  2. Next, combine the eggs, milk, maple syrup, vanilla, and cinnamon in a blender. Blend these together for 15-30 seconds until the milk and eggs have mixed together well.  A bowl of the beaten eggs with cinnamon
  3. Pour the mixture evenly over the cubed bread in the pan.  Egg mixture poured over the bread cubes in a 9×13 pan.
  4. Now, cut the cream cheese into small cubes, about 1/2 inch in diameter, and scatter them across the top of the dish.
  5. Next, rinse the blueberries in cool water and spread them across the top of the bread cubes, as well.  Blueberries and cream cheese added to the pan.
  6. Cover the baking dish with foil and place in the refrigerator overnight.

Baking the Blueberry Cream Cheese French Toast Casserole

  1. In the morning, preheat the oven to 350 degrees.
  2. Remove the French toast casserole from the refrigerator. Place the still foil covered dish into the preheated oven and bake for 1 hour. For the last 15 minutes of the bake time, remove the foil.
