Peach Delight - Sweet, creamy cheesecake, atop a perfect graham crust, piled high with fresh peaches. Simple, dreamy, and delicious!

Ingredients

Scale

The Crumb Crust

1 Package Graham Crackers

6 Tbsp. Butter, melted

1/4 c. Brown Sugar

Cheesecake Layer

8 oz. Block of Cream Cheese, Softened

1 Container of Cool Whip

1/2 c. Powdered Sugar

Fresh Peach Layer

1 c. Water

1/3 c. Sugar

2 Tbsp. Cornstarch

2 Tbsp. Orange Jello

4 c. Fresh Peaches, Diced (Wait to dice until directions specify so that they do not oxidize and turn brown.)

Instructions

Crumb Crust

  1. Crush one package of graham crackers. To do so, I like to break the crackers and add them to a food processor or blender. Then, pulse the blender/food processor just long enough for the crackers to be finely crushed.
  2. Next, add the sugar and butter to the graham cracker crumbs and mix well.  A bowl of Graham cracker crumbs ofr the crust.
  3. Press the crumb mixture into a 8-9 inch square pan (or any pan similar in size).

Cheesecake Layer

  1. Add the softened cream cheese and powdered sugar to the mixing bowl. Beat until smooth.
  2. Next, add the cool whip and beat, once again, until smooth.
  3. Pour the cheesecake mixture onto the prepared graham crumb crust.  A white pan with the white cheesecake layer of the dessert.
  4. Then, place the pan on a level shelf in the refrigerator to allow the cheesecake layer to set up a bit.

Fresh Peach Layer

  1. To begin, pout the water and cornstarch into to a small - medium sized saucepan. Then, with a whisk, blend the cornstarch and water together. (The mixture will be a milky, white color.)  Milky cornstarch water in a saucepan.
  2. Bring the mixture to a boil, stirring with the whisk occasionally.
  3. As mixture begins to boil, the color of the mixture will turn from milky white to clear and the mixture will be slightly thickened. At this point, turn off the burner and remove the saucepan from heat.  A saucepan with cornstarch water that has turned from milky to clear.
  4. Using the whisk, mix in the orange Jell-O powder until well mixed.
  5. Next, move the saucepan to the refrigerator to cool down. (This mixture is going to both add flavor to the peaches and keep the peaches from turning brown and getting mushy.)
  6. Wait about 10-15 minutes, then, begin cutting up the peaches. First cut them in half. Rotate the peach gently in your hands to pull one of the halves from the pit. Remove the pit, peel the skin from both halves and dice the peaches into small bite sized pieces.
  7. Next, remove the gelled mixture from the refrigerator. Then, gently stir the peaches and the thickened mixture together.  A saucepan with orange flavored sauce and fresh cut peaches.
  8. Now, it's time to remove the pan of dessert from the refrigerator. Spoon the fresh peach mixture over the cheesecake layer, then, smooth with the back of the spoon to distribute evenly.  A white pan of freshly made peach cream cheese layer dessert.
  9. Cover with plastic wrap and place the pan back in the refrigerator to allow the dessert to set up. Allow the dessert to cool and set up in the refrigerator for at least 1-2 hrs. before serving. (You can, most definitely eat it sooner, however, it may be a bit runny if it hasn't had time to chill properly.)

When the chill time is up, remove the dessert from the refrigerator and serve. Yum! Enjoy!

Storing Peach Delight: Keeping Your Dessert Fresh and Delicious

Peach Delight is a delightful dessert that combines the flavors of fresh peaches, creamy cheesecake, and a graham cracker crust. To ensure that your Peach Delight remains fresh, flavorful, and safe to eat, proper storage is essential. Here are some storage suggestions to help you keep your Peach Delight in its prime:

    • Refrigeration is Key: Peach Delight contains dairy products like fresh peaches, cream cheese, and Cool Whip, which are prone to spoilage if left at room temperature for too long. Therefore, it should always be stored in the refrigerator.

    • Cover it Up: To prevent your Peach Delight from being exposed to the air and drying out or absorbing odors in your refrigerator, cover it securely. You can use plastic wrap, aluminum foil, or an airtight container. If using plastic wrap or foil, press it directly onto the surface of the dessert to minimize air exposure.

    • Consume Within 3-4 Days: For optimal taste and texture, try to consume your Peach Delight within 3-4 days of preparation. It's at its best when the peaches are fresh, and the layers remain distinct and delicious.

    • Keep it Cool for Outdoor Events: If you plan to serve Peach Delight at an outdoor gathering or picnic, ensure that it stays chilled. Use a cooler or ice packs to maintain a safe temperature while transporting, especially on warm days.

    • Avoid Freezing: While Peach Delight can technically be frozen, it's not recommended. The texture may change, and the layers might become less distinct.  If you must freeze it, do so in an airtight container, but keep in mind that the quality may not be the same upon thawing.

By following these storage suggestions, you can extend the shelf life of your Peach Delight and continue to enjoy its sweet and creamy goodness for days to come.
