This ground beef, potato, and green bean casserole is full of the savory, comforting flavors we all love but without any store-bought canned cream soups!

Ingredients

Scale

2 lbs. Ground Beef

4-5 Medium Potatoes, Boiled, Peeled, and Cubed

1 Quart Green Beans (2-15 oz. cans or about 2 lbs. fresh or frozen green beans, boiled or steamed)

12 oz. Cheddar Cheese, Grated

1 1/2 c. Sour Cream

1/2 c. Mayonnaise

2 Tbsp. Minced, Dried Onion

2 tsp. Salt

1 1/2 tsp. Garlic Powder

1 tsp. Onion Powder

1 tsp. Black Pepper

Instructions

    1. To begin, prepare all ingredients. Boil the potatoes until soft, then, remove them from the water and allow to cool. When cool, peel and cube the potatoes. Brown the ground beef and, if using fresh or frozen green beans, steam or boil them until tender. (Personally, we like this casserole better using canned beans, as they are softer. But use them however you prefer.)
    2. Mix together remaining ingredients - sour cream, mayonnaise, and seasonings. Stir in the cheese. In a large mixing bowl, combine the ground beef, potatoes, green beans, and the sour cream mixture and stir until well combined.
    3. Spoon into a 9x13 inch pan. Cover and bake in a preheated oven at 350 degrees Fahrenheit for 45-50 minutes.
    4. Enjoy!

Serving Suggestions for Ground Beef, Potato, and Green Bean Casserole:

Your Ground Beef, Potato, and Green Bean Casserole is a comforting and wholesome dish that's perfect for family dinners, potlucks, or weeknight meals. To make the most of this hearty casserole, consider these serving suggestions to elevate your dining experience:

Side Salad: Complement the casserole with a fresh green salad. A simple garden salad with a light vinaigrette or a classic Caesar salad can provide a refreshing contrast to the richness of the casserole.

Bread: Fresh, warm, bread or dinner rolls make an excellent accompaniment. We like this served with either homemade Amish Honey Wheat Bread or Amish White Bread spread with butter and jelly.

Vegetable Medley: While the casserole already includes green beans, you can further enhance the veggie side by serving a medley of steamed or roasted vegetables like carrots, broccoli, or cauliflower.

Hot Sauce or Pickles: For those who enjoy a bit of heat or tang, consider providing hot sauce or some pickles on the side. They can add some zing to the dish. Personally, with this dish, I’m a pickle person. I’m also a huge fan of these Refrigerator pickled beets! I love the way they bring a pop of vibrant flavor to the dinner table.

Family Gatherings: This casserole is perfect for family gatherings and potlucks. Serve it with a variety of side dishes, and you'll have a crowd-pleasing meal. Whether you choose to enjoy your Ground Beef, Potato, and Green Bean Casserole as a comforting weeknight dinner or at a special gathering, these serving suggestions can help you create a memorable and satisfying meal.

Storage Suggestions: How to Store Ground Beef, Potato, and Green Bean Casserole

Your Ground Beef, Potato, and Green Bean Casserole is a delightful dish that can be stored to enjoy as leftovers or for meal prep. Proper storage will help maintain its flavor and quality. Here's how to store it effectively:

1. Refrigeration: If you have leftovers, allow the casserole to cool to room temperature. Once cooled, cover the 9x13 inch pan or transfer the remaining portions into airtight containers. Place the containers in the refrigerator. The casserole can be stored for up to 5-7 days in the fridge.

2. Freezing: This casserole freezes well! If you've made a larger batch or want to save some for future meals, freezing is a great option. Follow these steps for freezing:

a. To freeze in a pan for a later meal, simply mix up the dish as directed. Do not bake but, wrap well, label and date it, and freeze!

b. Portion the casserole: You can either freeze the entire casserole in a large container or divide it into individual portions, which makes reheating more convenient. If you’ve already cooked the casserole and want to freeze portions of it for later, first allow the casserole to cool completely. It's important to avoid putting hot food in the freezer as it can raise the temperature inside the freezer, affecting the quality of other items.

c. Wrap it well: To prevent freezer burn and maintain freshness, use plastic wrap or aluminum foil to tightly cover the casserole dish or individual portions. Alternatively, you can transfer the portions to airtight, freezer-safe containers.

d. Label and date: Always label the containers with the contents and the date you prepared the casserole. This makes it easier to keep track of what's in your freezer and ensures you use it within a reasonable time.

e. Freeze: Place the well-wrapped casserole or containers in the freezer. Store for up to 2-3 months for the best quality.

Reheating from Freezing: If you've frozen the casserole, remove the portions you plan to reheat from the freezer and transfer them to the refrigerator to thaw overnight. Once thawed, you can bake as directed. If it was already baked, simply reheat it in the oven or microwave till warm through.

With these storage suggestions, you can enjoy your Ground Beef, Potato, and Green Bean Casserole over multiple meals, making it a convenient and delicious option for busy days or when you want a comforting, homemade meal without the fuss of cooking from scratch.
